I generally don’t recommend treats for people but this is a special occasion. These macaroons are absolutely amazing and surprisingly don’t have much of a blood sugar kick. They are actually more fat than anything else. Enjoy, and Thank Meggie!
Coconut Macaroons
(adapted from Elana’sPantry.com)
6 egg whites
¼ teaspoon celtic sea salt
½ cup honey
1 tablespoon vanilla extract
3 cups unsweetened shredded coconut
In a mixing bowl whisk egg whites and salt until stiff peaks form – this took 5 minutes of whisking in my blender to form the peaks
Fold in honey, vanilla extract and coconut then refrigerate for 30 minutes
Drop batter onto a parchment paper
Pinch each macaroon at the top
Bake at 350° for 10-15 minutes, until lightly browned
